Utah State uses the Hook'em sign and their logo is a steer. Somebody tell the guys in college station it ain't rocket science.

For the same reasons aggie didn't change their name to "Texas State" years ago and drop the whole fake army identity. It makes more sense for "A and M" to stand for nothing.
