The point on a brisket is typically the fattiest cut. Pitmasters often trim the point (and select edges) off a brisket and return those pieces to the smoker.
Are burnt ends tough, chewy worthless cuts of meat, or are they heavenly bites of smoky goodness? It depends on who you ask...
Rather than discard the trimmings and fat, we choose to savor all the information that flows through the site. So, sit down and help yourself to some burnt ends.

After a much needed win over Oklahoma, it feels like the Longhorns can turn around their season. At 2-4, the Horns sit in exactly the same place they were at this time last season, but things have a different feel to them. The Red River Showdown is a game that draws all the eyes of the State’s top players, and this year was no exception. We spoke with a number of recruits and offer these tidbits from the aftermath of the big win.
As HornSports first reported, Allen offensive lineman Greg Little was in attendance. The top offensive lineman in the nation attended the game with some teammates and isn’t really considering Texas at this point. Still, any exposure Texas can get with the massive tackle is good. If they can just manage to get him on campus things could change.....
Arlington (TX) Bowie OL Tope Imade was able to witness the first game involving his future team this year as he made the trip across the Metroplex. While the big man enjoyed the game it was clear he should have brought some sun block. “I never knew college games could be so long,†Imade told us laughing. “I guess the heat just made things feel slow.†Imade mentioned he saw Greg Little, Jean Delance, Kaden Smith, and Lil’Jordan Humphrey in attendance. He also told us he loved the atmosphere and was proud of the way the team played for Charlie Strong.
Mansfield (TX) Lake Ridge LB Loren Mondy was invited to the game but wasn’t able to attend. He was able to catch the game on TV and was happy with the effort Texas showed. “I loved the way they played, the defense stepped up and did what they needed to. It was a great win for the Horns.†Mondy said he believes this is a game that could help Texas turn their season around and that Charlie Strong and the coaching staff is a group you can believe in.
Dallas (TX) Woodrow Wilson ATH Darrion “Speedy†Green made the trip over to the Cotton Bowl and really enjoyed himself. He called the experience “Really fantastic,†and named some of the other high school players he saw in attendance. “Dee Anderson, Eric Cuffee, Demarkus Acy, Herb Sparks, Rajan Cunningham, Jean Delance, Avery Davis, Camron Buckley, and Parrish Cobb.†Green said he believed this team was playing with extra motivation. “They really improved and I think they did it to save Coach Strong’s job.†As a local kid growing up in the shadow of the Cotton Bowl, this game means a lot to Green. “It’s a great atmosphere, the Red River Rivalry is the most legendary rivalry.†Green said he could definitely see himself playing in this game in the future. What did this mean to this Longhorns team? “I think it will motivate them to work harder and do what they’ve got to do for the rest of the year.†Green’s Woodrow Wilson team is 5-1 and well on their way to winning a district championship.
Mesquite (TX) Poteet DB Daquain Jackson had to catch the game on television as well, but he was happy with the performance turned in by the home state team. “Coach Strong and his staff made excellent choices,†Jackson told us. Jackson says he thought Oklahoma was very good, and this win could help Texas turn the tables on a rough start. Being from Poteet, he didn’t have to look very far to imagine this scenario for himself. Former Poteet stars Malik Jefferson and DeAndre McNeal were on the field making plays and Jackson says that motivates him. “Being with them again in the same atmosphere would be great.†Jackson is receiving the most attention from Baylor at this point, but he is on the Texas radar.
Wylie (TX) East running back Eno Benjamin took in the game and spoke with us afterwards. “They didn’t let their loss last week affect how they came out strong yesterday,†Benjamin told us. As a runner, Benjamin enjoyed the commitment to the running game Texas showed in their victory and told us that is something he thinks about when considering schools. He is taking a break from the recruiting grind to focus on his high school season, but he will be one of the most pursued players in the state in the coming year.
We spoke to the parent of a DFW area 2016 athlete who watched the game on Saturday. He raved about the performance and the perception he has of Charlie Strong's team. “I thought UT played the way they were capable of playing. They were just incredible yesterday in all aspects of the game. I was so proud of those players and the entire coaching staff because it involves a lot of work behind the scenes.†This parent also said this is the reason why Charlie Strong needs more time. “I believe they just need to give Strong more time to get all of his players to buy into his system. He was an awesome defensive coordinator at Florida and he’s a great coach. I’m pulling for himâ€.
A quick note on 2017 Manvel safety Derrick Tucker who was offered by Texas just after the Under The Lights camp in July. Tucker indicated he was ready to make a commitment and the buzz is that it will come down to Texas against LSU. In the past Tucker has talked up LSU and the SEC, but he was very close to committing to Texas back when he got the offer. Be on the lookout for this one.

HornSports was out at the Manvel vs. Pearland Dawson game last Friday night and watched the Mavericks defeated the Eagles 49-31. The Manvel program, coached by Kirk Martin, is on pace to win yet another district title. The team is plentiful with Division I talent, and the eyes of Texas are on many of them. We caught up with a handful of guys that talked Texas with us.
First and foremost, Reggie Hemphill-Mapps tells us he is "100% Texas." The 4-star wide receiver & playmaker has never steered from his commitment to the Longhorns, something Texas fans can take solace in. Hemphill is firmly committed to the 'Horns, but that doesn't mean teams aren't still trying to flip him. He tells he is hearing a heavily from Tennessee and Texas Tech these days and reiterated to us that he and the Texas coaching staff stay in constant communication.
All purpose back D'Vaughn Pennamon is nothing short of a tremendous athlete. The versatile Pennamon gained 101 yards on 6 carries and added 54 receiving yards on 3 receptions. Until you watch him play, you can't appreciate what he has to offer. Unless you are the Ole Miss Rebels, that is, who hold the verbal pledge of Pennamon. Pennamon tells us he is a solid Hot Toddy commit but he is hearing more and more from Arkansas and Oklahoma State lately. He does not hold a Texas offer, which is surprising given his talent, but told us he has always liked the Longhorns. "I've always liked them. Growing up in Texas, they were the team you always heard about." Pennamon is a guy you will hear more and more about on Saturdays in years to come.
Shut-down safety and #9 on the HornSports Top 50 for 2016, Deontay Anderson, is all that and a bag of chips. Anderson has offers from almost 50 Division I programs, wbich includes the premier programs in the country. Off the field he is a good-natured, cheerful young man, while in the secondary he is all-business. Texas is one of Anderson's 4 Top Schools, including LSU, Texas A&M and Ole Miss. We asked Anderson about the Texas program and what his thoughts were regarding the recent string of losses (prior to the win over Oklahoma). "It's only Strong's second year. You have to give him time to do his thing." The D-train would would a good addition at DBU. We'll be keeping a close eye on his recruitment to see how things shake out.
Outside Linebacker Jordan Carmouche holds an offer from the Longhorns but it doesn't appear that either side is closer to solidifying anything anytime soon. Carmouche tells us he and the Texas coaching staff communicate "every now and then" but not frequently. When we asked him if Texas was still on his list of schools he was considering, the facial expression Carmouche exhibited didn't look promising for the Longhorns.
