The point on a brisket is typically the fattiest cut. Pitmasters often trim the point (and select edges) off a brisket and return those pieces to the smoker.



Are burnt ends tough, chewy worthless cuts of meat, or are they heavenly bites of smoky goodness? It depends on who you ask...



Rather than discard the trimmings and fat, we choose to savor all the information that flows through the site. So, sit down and help yourself to some burnt ends.

We talked with Texas commit and Brother Martin Tight End Peyton Aucoin to see how the upcoming season for the Crusaders is shaping up. After a 40-7 blowout over Vandebilt Catholic in a scrimmage last Friday at the Brothers of the Sacred Heart Jamboree at Nicholls State University, it's safe to say the Crusaders look ready to play. The game lasted only 30 minutes (two 15 minute halves) and Brother Martin pulled the starters after the first half. The team is billed as a Top 5 in-state program and rightfully so.



Aucoin tells us he's "pumped up" about the upcoming season for the Longhorns and while he hasn't settled on which game he will attend, he knows he "will make at least one."



While being an out-of-state commit poses travel challenges in-state recruits don't necessarily experience, Aucoin stays connected via the Longhorn Network, which he had installed a couple of days after he committed to the 'Horns.

In 2014, Ennis (TX) offensive tackle Trendon Rolen was a starter on varsity as a sophomore. He ended the season named to the All-State team after winning a State Championship with the Lions. After a sophomore year like that it’s hard to believe any season can top that. Rolen is now focused on getting his team back to state, and landing on a few more recruiting radars. “TCU came down, Florida State, and Oklahoma, but I’m sure I’ll get more attention this season”, said Rolen when asked who was showing him attention. The Longhorns aren’t in the mix at this time, but Rolen is a prospect who hasn’t hit the national radar yet. So who is standing out early for the 6’4 300 lbs. tackle? “TCU”, Rolen said. “I just like the coaching staff and the program”.



Ennis got their title defense started in a thriller against a very good Mansfield Timberview team. Timberview and Ennis were arguably the top two teams in the state at their level last season, and the highly anticipated rematch did not disappoint. Ennis struggled early and went down 21-0 five minutes into the game. While Timberview looked like the confident team, Ennis had the look of a young team trying to reload after losing a large number of starters to graduation. The Lions tightened up on defense, and fell back on their steady power running game while they slowly chipped away at the Timberview lead. In the end, Ennis held on to win the game 33-28, and sent Timberview home disappointed once again. Rolen said there was no panic on the sideline once the team went down early, “We just kept fighting”, Rolen said. “We knew we were down early and we’d have to keep fighting, I had to bring the O up and be a leader”. Things don’t get easier from this point out for Ennis, who are on the road next week against Shawn Robinson and Denton Guyer.

This week’s high school slate offers up a delicious two pack of games that HornSports will be covering live. On Friday night, we will be at Wilemon Stadium in Arlington to see Tope Imade in action as Bowie faces off against defending state champions Cedar Hill. This will be a tough matchup for Bowie a week after a blowout loss to Dallas Jesuit, and Imade is looking to prove some doubters wrong about his team. Cedar Hill features multiple big time prospects as always. Texas offered wide receiver Camron Buckley over the summer, and he will lead the receiving attack. His teammate Charleston Rambo is a newcomer to the team, but is already seeing massive attention. Rambo is a 2017 prospect with multiple offers, and Texas contacted him when he played at Woodrow Wilson in Dallas. Avery Davis is one of the top quarterbacks in the 2017 class with early offers from SMU, Texas Tech, Kansas, and Oregon State. Cedar Hill is also led by Joey McGuire, who is arguably the top coach in the state. Put it all together and you have a recipe for a tough matchup.



On Saturday before Texas kicks off in South Bend, another big matchup is on the table in DFW. The vaunted IMG Academy from Bradenton, FL will face off against DeSoto. This game held a bit more intrigue for Texas fans before DeSoto receiver Dee Anderson was denied the right to play this season, but for high school football fans and recruiting junkies alike there is a ton of talent on the field. IMG, which is more high end football factory than high school boasts a team consisting of multiple four and five star players including quarterback Shea Patterson, tight end Isaac Nauta, defensive back Savion Smith, defensive end Shavar Manuel, and many others. What will be most interesting to see, is if IMG can form a chemistry quick enough. They struggled last week in a 19-7 loss to American Heritage (FL) as the team failed to achieve any level of cohesion. DeSoto was not without their own struggles as they lost a fairly lopsided 46-26 matchup against Arlington Martin. Quarterback Tristen Wallace struggled to throw the ball accurately, and the Eagles might have been caught looking ahead to this week as their performance came out pretty flat. Last week we released our latest update of the HornSports 2016 Top 50. Five new names made the list, and we’d like to tell you a bit about each of them.



Brandon Bowen (Ranked 19th) – Bowen was the biggest riser on the list, and it’s difficult to find a prospect with a better overall athletic package. The Trophy Club Byron Nelson defensive end lined up at receiver and tight end last season, and did so once again this summer at the state 7 on 7 tournament which drew rave reviews from those in attendance. Bowen also won a state championship in the high jump. His ridiculous skillset projects to a player that could be a high draft pick once he fills out and develops. Bowen had Texas in contention, but is reportedly down to a top two of Baylor and Oklahoma, with the Bears as the odds on favorite.



Marcell Southall (Ranked 22nd) – Another player who made a large jump was Southall who gets better each time you watch his film. In fact, I’d be willing to bet Charlie Strong and Brick Haley salivate when watching the Duncanville prospect. At 6’3 270 lbs., Southall moves like a predator and has the capability to play in multiple positions on the defensive line. He was a slow starter in recruiting, but his name got out there once Baylor, Oklahoma, and Texas offered him in April. There’s some thought that Oklahoma holds a slight edge in this one, but it seems as things haven’t really heated up with him yet.



Jordan Elliott (Ranked 32nd) – I’ve gone back and forth on Elliott throughout my evaluations, but it finally came down to the fact that Elliott is one of the only true three technique candidates in the state. The Houston Westside prospect can even play the 5 technique in an odd front which gives him added versatility. While he may not possess the explosive ability of Ed Oliver, or the big cat skills of Marcell Southall, Elliott is a capable athlete in a big body. Elliott is currently committed to Houston in name only, and things are looking very good for the Longhorns in this one.



Grayland Arnold (Ranked 42nd) – Grayland Arnold of Kountze is a name that has floated on the outside of this list since its inception. The dynamic athlete shows a speed on film that can only be described as “God given”, with fluid athleticism to boot. Arnold plays on both sides of the ball for his high school team, but will most likely be a defensive back at the next level. Arnold is currently committed to Baylor, and though he has flirted heavily with Texas after receiving an offer this summer, he joined Kam Martin in getting a Baylor tattoo to affirm his commitment.



Rahssan Thornton (Ranked 46th) – As a teammate to Killeen (TX) Shoemaker tackle Kendell Jones, Thornton is sometimes overshadowed by the massive attention afforded to his teammate. Thornton can certainly hold his own as a 6’3 220 lbs. pass rushing nightmare. While Thornton lacks the bulk and ability to play the run, he can absolutely get after the quarterback. Thornton camped at Texas this summer, but committed to LSU shortly after. The Texas staff has stayed on Thornton throughout, and have a good chance at getting him back on campus for an official. If that happens I would say Texas has a good chance of making the flip.

The Longhorns open the season at Notre Dame this Saturday. Tyrone Swoopes was named the starter by head Coach Charlie Strong in today's press conference, which was reflected in the subsequently released depth chart. How does the decision to start Swoopes sit with the players?



According to our source that watches practices and is close to the team, "most are glad and feel like he's earned it."



Does the support for Swoopes translate to more wins in 2015? Possibly but not necessarily.



Another source privy to practice details tells us he "loves the intensity and talent level of the team" but feels the Longhorns are just very young at some positions." He furthered that sentiment with the following statement: "It doesn't matter how talented we are, they are still freshmen and make mistakes."



The positive to these mistakes? "I love that they are made at 100 miles an hour," he closed.



The Longhorns and Fighting Irish will kickoff at 6:30 pm CST on Saturday, September 5th. The game will be nationally televised on NBC.

Exactly. We may lose a few, but it will be exciting again to watch the Horns play.

I just hope the great practice performances by Swoopes can translate to the field on Saturday.

On a side note . . . Burnt Ends, The High School thread and the Landscape Thread all hit on the same evening? Wow, that's good timing. :)
