The point on a brisket is typically the fattiest cut. Pitmasters often trim the point (and select edges) off a brisket and return those pieces to the smoker.
Are burnt ends tough, chewy worthless cuts of meat, or are they heavenly bites of smoky goodness? It depends on who you ask...
Rather than discard the trimmings and fat, we choose to savor all the information that flows through the site. So, sit down and help yourself to some burnt ends.

#TexasHeatwave
Last weekend, Tom Herman put together a party for the team called the Texas Heatwave. Beyond being extremely successful at building up a sense of family within the team, it impressed every single recruit who was there. Only the recruits that Texas is targeting the hardest were allowed in, including seven commits.
These commits were able to really go to work on re-recruiting each other whilst making headway with other guys there.
Most recruits left with positive reviews calling it a “family atmosphere.†Not a single person there left upset. This event was by far one of the most successful recruiting events Texas has put on in quite a while.
Rondale Moore
Rondale Moore is a name that Longhorns fans should become quickly acquainted with. The 2018 4-star slot from Louisville, KY made the trip to Austin last weekend to visit Texas for the first time, and to join in on the fun of the Heatwave. The 5’8†174-pound WR ran a 4.33-forty and 4.01-shuttle, and scored a 42.7" vertical at The Opening. He runs very clean routes and is dynamite on the field. He’s a take in my book.
Moore left Texas amazed and came close to pulling the trigger on the Longhorns; however, those close to him urged him to slow down and take his time. We’ve still heard that it could go down soon, but some patience needs to be exercised.
Tommy Bush
Sticking with the theme of insane athleticism, enter Schertz Clemens 2018 4-star WR Tommy Bush. Bush is 6’4â€, 191lbs, and ran a 4.47 laser timed forty. It took some time for the Longhorns to offer the athlete from outside of San Antonio, but Bush came away from the Heatwave with a Longhorn offer in his pocket.
I was able to go out and watch Tommy practice Tuesday, as he prepares for The Opening, to ask him about his time at Texas and his thoughts on his offer.
How was the trip to Texas?
"Texas was a cool, fun experience. The pool party was very fun. Kids were out there bonding with the players. My family and I mainly talked to the coaches because we’ve never really talked to them that much in person, just more on the phone. That part was more of a business type deal after the pool party."
What did you and the coaches talk about?
"First off, we started getting to know each other. Just talking about family, hobbies, and whatnot. Probably an hour later, we got to the business side of it. Why haven’t they offered me? It was the big deal everyone was talking about. It was more of a recruiting type situation, “We’re not going to offer this kid yet because we have something else we’re trying to do.†But it’s not like I wasn’t good enough for them, it was just the situation I was in."
Now that you have the offer, what do you think of it?
"It’s completely nice because it’s 45 minutes away from the house. It’s always nice to get a big home offer, period. Plus, it’s one of the most prestigious schools out there. It’s Texas."
Do you know where it stacks up now?
"Not yet, but I believe if I get to know them a little bit better I’ll probably start putting a little more interest into them. My top 10 will be out next month."
Did you meet and make friends with any of the current players?
"I met a few players! They were talking to us about what their typical day was, what it was like being at Texas…that type of deal while we were eating. I got to meet a linebacker, a safety, and a couple of transfers. We met Malik Jefferson earlier in the day."
I know you liked the lockers.
"The locker was clean. We saw the locker room renovations. They’re obviously not done yet, but it’s going to look clean when they get it all fixed up."
Can you differentiate Texas and Texas A&M for me?
"Not really. They were both very hype and just family type atmosphere. I guess you just have to pay attention to the coaches. You can kind of separate them like that. Coach Herman is more of a player-type, fun-type dude whereas Coach Sumlin is a straight to business guy, but he has that side of him outside the field. Really, they're the same to me. The situation, as far as playing, will really separate them."
Reese Moore
The Longhorn OT commit from Seminole made his way from way out west into Austin for the Heatwave. This was Reese’s first time back to Texas as a Longhorn commit, so I caught up with him to get his thoughts on his trip.
How was the atmosphere?
"Unbelievable! It was so cool to see how the team interacts with each other off the field!"
What was your favorite part?
"We played a little pick up basketball game with a lot of the recruits, it was pretty fun!"
I heard you took it to the guys on the court!
"Haha I had a good game."
Anybody there you found out you really get along with? How was Rising?
"Cameron Wire and Byron Hobbs."
Brian Williams
The top 2019 safety in the nation, Bishop Dunne’s Brian Williams, made his first trip to the University of Texas ever last weekend. Williams is the top guy on Texas’ board for 2019 secondary, so it was crucial that they nailed his trip. He didn’t make it to the Texas Heatwave party, but still left with very positive reviews about his first experience at Texas.
"It was amazing, it definitely exceeded expectations. I just enjoyed everything, especially their Forever Texas program for football players and just how great the university was ranked."
Did you get to talk to any of the coaches?
"Yes, definitely. My whole tour was with Coach Naivar and Coach Huff, and I was able to speak to PJ Locke for a few minutes."
What did you parents and little sister think?
"They enjoyed it as well."
What are you taking away from you trip there?
"I can tell they are building something special and I expect to see them have a great year."
Good stuff man. I'm glad you enjoyed yourself. What'd you think of Austin?
"It's a wonderful place to be. I really liked it."
QB Matt Corral Decommits from USC
How does a QB decommitting from USC affect Texas? Longhorn commit Cam Rising is now the top guy on USC's big board. With the home team USC now in the mix for Rising, and him currently being 1 of 2 QBs in Texas’ class, it becomes a situation that Texas will want to keep an eye on. Tom Herman already knew that keeping a two quarterback class was going to be difficult, but it just got harder.
