The point on a brisket is typically the fattiest cut. Pitmasters often trim the point (and select edges) off a brisket and return those pieces to the smoker.
Are burnt ends tough, chewy worthless cuts of meat, or are they heavenly bites of smoky goodness? It depends on who you ask...
Rather than discard the trimmings and fat, we choose to savor all the information that flows through the site. So, sit down and help yourself to some burnt ends.

Last week's Burnt Ends discussed the end of the Augie Garrido era at Texas. If you missed it, our sources are telling us that Garrido will retire at the end of the season. If it comes down to it, Steve Patterson included a buyout clause when UT extended Garrido's contract last year, and the amount is one the Athletic Department is prepared to absorb.
Two days after our report, on Longhorn Network, Garrido said:
"If [losing didn't rip me apart], then it would be time for me to step down. But it’s not time."
We went back to multiple sources to verify our report. We were told that although the team had a bye week last weekend, nothing changed substantially. In other words, the LHN comment is being categorized as "for public consumption" and is not indicative of what is truly happening in Bellmont.
We also reported last week that pitching coach Skip Johnson was not likely to get more than a courtesy interview for the head coaching position. This week, we're hearing that assistant coaches aren't likely to even be retained. In other words, not only will Johnson not get the head coaching job, Patterson is inclined to let a new head coach hire a complete staff.
Obviously the situation could still change if the team catches fire against Baylor and in the conference tournament, but the coaches are not planning on the team suddenly transforming their attitude.

Everyone’s attention at the quarterback position in the 2017 class will be focused on Denton Guyer QB Shawn Robinson, but there is a second name emerging as a legitimate UT prospect - Refugio QB Jaylon Mascorro.
Mascorro is an extremely talented dual threat player who landed on the Longhorns radar early on in the process. After getting invited to the Texas Elite Passing Camp this summer, he told HornSports that he receives a hand written letter from Texas quarterback coach Shawn Watson each week.
It’s still so early in the 2017 recruiting cycle, even recruitniks don’t know names yet. But file Mascorro’s name – he really likes Texas and it appears the feeling is mutual.

We profiled Arlington Lamar wide receiver Kofi Boateng in a recent Burnt Ends. After the profile, we were fortunate to catch up with Boateng to get an update on his recruitment.
The talented receiver told us he hasn’t heard much from Texas recently. The Longhorns already have two committed wide receivers and are looking at some tight numbers for this class.
With a few higher rated targets on the board, it’s sounds like the Longhorns are going to wait a while to really engage with Boateng. The question is: Will it be too late? Boateng is receiving heavy interest from several out of state schools and told us that Ole Miss and Arizona State are standing out for him right now.

The Longhorns aren’t wasting any time identifying and offering 2017 targets – particularly ones that will improve Joe Wickline’s offensive line. Bellaire Episcopal offensive tackle Walker Little was offered by the Longhorns last week – and Little is anything BUT small. It’s still early in the recruiting process for Walker, but the 6-7, 305 lb. tackle already has offers from Rice, Maryland and North Texas in addition to his latest from Texas.
While it is much too early to crystal-ball Little to any school, he comes from a family that is no stranger to college football. His grandfather played at Rice and went on to be drafted by the Giants and his uncle was a two-time All American at Texas A&M and played for the Colts.
Since we’re mentioning his family-ties to former SWC schools, Little’s dad, Doug, played baseball for Texas Tech.
We talked to a family member shortly after he received the offer from Texas.
“This only validates what we have known all along. Walker is a hard-working, tenacious, competitor.â€
“We know Walker will continue to work hard and find the right place for him!â€
Wickline and the ‘Horns played it right on Little by offering early. It’s only a matter of time before he gets the attention of other Division-I programs.
